Vineyard: experimental vineyard (Etna bushvine) with allochthonous and autochthonous vines planted in Milo (Contrada Caselle) on sandy volcanic soil.
Grapes: Pinot Bianco, Savagnin, Chenin Bianco, Gewurztraminer and Carricante
Altitude: 2,526 feet, 770 meters
Vinification: the manually harvested grapes are pressed in whole clusters using a pneumatic press. Fermentation with indigenous yeasts and aging take place in second passage French oak tonneaux. The duration of the aging of the wine is about 6 months.
We do not use biotechnology for the production of our wines.
In bottling we carry out a wide filtration.
Approximately 1,200 will be produced in the 2022 vintage.
